Because energy is coneervsd. The chemical bonds in a glucose molecule are at a higher energy level than those in CO2 and H2O, and because energy must be coneervsd, that allows us to do work along a biochemical pathway. Cells use that work t(o assemble ATP, which can be broken down by proteins to do anything that requires an energy input.This is completely in line with the 2nd law. Just the fact that we are turning one mole of solid into at least 6 (depending on how you count water) moles of gas gives an enormous entropy increase without even considering anything else. Since we are not extracting all the energy as work (the leftovers become body heat), it is good.
